I think all the time that I spend scrolling through instagram finally paid off because an instagram post inspired me to create this recipe. I guess it isn’t a recipe as much as a combination of recipes, but as soon as I saw that photo of a peanut butter ice cream sandwich I just knew I had to make a vegan version. I’ve shared a version of this banana ice cream recipe before but I’m surprised that I haven’t blogged about these biscuits already because I make them a lot. They’re easy and they’re always a hit. It would be easy to make these sugar free and gluten free by swapping the flour and sugar for brown rice flour and maple syrup, but I feel like my diet is too restrictive at the moment. I’m trying not to buy any plastic this month and it’s hard, so I’m going to throw caution to the wind and bake with sugar! Peanut butter is my favourite flavour – I eat it straight from the jar sometimes when I’m watching Netflix – so anything with double the peanut butter is good in my book!
For the ice cream:
2 or 3 ripe bananas, chopped and frozen overnight
1 tablespoon peanut butter
1 tablespoon melted coconut oil
For the biscuit:
1 1/2 mugs of plain flour
3/4 mug peanut butter
1/4 cup oil
1/4 cup soy milk
3/4 mug sugar
2 tsp cinnamon
To make the ice cream, simply mix the bananas, peanut butter and melted coconut oil in a food processor until smooth. A blender will also work but you might have to scrape down the edges from time to time if it’s mixing too slowly. Then pour into a container and stick it in the freezer. Simple!
To make the peanut butter biscuits, preheat your oven to 180⁰C and mix all the ingredients together. If the mixture is too stiff you can always add some more soy milk (although you don’t want it to be runny!) Grease a baking tray, shape the mixture into lots of small circles or a couple of big ones, and bake for 10 minutes.
To assemble your sandwiches, you want to wait for about an hour for the biscuits to cool so that they won’t crumble. If you leave your ice cream in the freezer overnight you can cut it into slices for the sandwich filling, otherwise just spread it on like nutella! Squash the biscuit slices together and enjoy
