On Friday night I had some friends over for halloween and baked a whole load of vegan treats, including these spooky cookies! People are usually sceptical about vegan baking, so luckily they went down well! Obviously you can use this recipe to bake cookies in all shapes and sizes – they don’t have to be spooky. I think they were super tasty even if I do say so myself. They’re just the right amount of sugary, and they melt in your mouth. Yum.
You will need:
1 cup of plain flower
1/2 cup of granulated sugar
1/2 cup of vegan margarine
1 teaspoon of baking powder
1 teaspoon of vanilla extract
2 teaspoons of cinnamon
2 cups of icing sugar
Blue, green and red food colouring
Cookie cutters, a rolling pin and some baking trays!
First, cream the sugar and the margarine with the vanilla extract. Then gradually mix in the flour, baking powder and cinnamon. Once you have a ball of dough, wrap it up in the cling film and put it in the fridge for an hour. Dust a work surface and your rolling pin in flour, and roll out the dough to about 1/2 cm thick and use your cookie cutters to cut out shapes. Keep re-rolling the dough and cutting out shapes until you have used it all up! Then grease a baking tray with margarine and bake your cookies at 180 degrees C for 20 minutes, or until they are looking golden brown.
I did the white cookies (the ghost and the skull) first and then I set aside a little bit of the icing and dropped in a little red food colouring for the pumpkins (there was no yellow or orange icing in the shops, so I made pink pumpkins instead!) To this I added a lot of blue and green icing until I got this dark brown colour that I used for the bats and the cat. Once the bottom layer was dry I used the white and the brown icing for eyes and then coloured the white icing green for the stalk of the pumpkin!
